Peanut Butter Chocolate Mousse…For Breakfast

BreakfastI bet you never thought you would be reading an article about peanut butter chocolate mousse for breakfast on this blog.  Honestly, I never thought I would be writing such an article let alone actually eating such a thing for breakfast, but here I am.  In my quest to become wheat free and remove processed foods from my diet I find myself branching out and trying new and different things that I would not have thought of even a month ago.

The first of these new and different things is a breakfast that I absolutely love!  Before I tell you about it, I want you to keep in mind that you have to be open-minded about trying new things and you have to keep in mind that healthier versions of dishes are not going to taste exactly like their unhealthy counter-parts, but it is possible to find great substitutions, especially if you are willing to keep an open mind.

I know the first thing you are probably thinking is “What in the world is Kassie doing eating peanut butter after she has told us what a problem food that is for her?”  Before you get upset and think I haven’t been honest with you let me explain that I am making my breakfast “mousse” with a product called PB2 which is a powdered peanut butter that has had 85% of the fat removed from it.  PB2 comes in plain and chocolate peanut butter and it has been a GREAT substitution for me as a 2TBS serving is only 1 Point Plus whereas a 2TBS serving of “regular” peanut butter is 5 Points Plus.  I’m sure if you have never tried it you are wondering if it tastes like “regular” peanut butter and the answer is “NO!”  I think it tastes quite good but it is an adjustment in the beginning.  I eat both flavors but I have to admit I am partial to the chocolate.


In the last several months I have made the switch from flavored yogurts with lots of artificial flavors and additives to plain non-fat Greek yogurt.  As most of you know, the plain Greek yogurt has quite a bite to it and can actually be used in place of sour cream on baked potatoes.  It’s not something I am going to eat straight from the container in the morning.  I have been combining it with fruit or sometimes a ½ TBS of honey (1 Point Plus) but honestly, I was getting a little burned out on it.

Then a few weeks ago I heard a great idea in my Weight Watchers meeting and it has changed my outlook on breakfast.  I wish I knew exactly who had given the idea in one of the meetings prior to mine (my leader was just passing it on because it was a good idea) so that I could give that person proper credit, but I thank them very much!  This is also why I tell people it’s a good idea to attend the meetings because I hear great ideas all the time in mine.

Peanut Butter Chocolate Breakfast Mousse

1 5.3oz container of plain, non-fat, Greek yogurt

4 TBSP PB 2 Chocolate

Combine the ingredients in a bowl and stir until all of the PB2 powder is mixed in and the mixture is smooth and creamy.  Enjoy alone or with fruit such as half of a banana.  The mixture can also be prepared ahead of time and stored in individual containers for an easy grab and go breakfast.  4 Points Plus

I will tell you that you can still slightly taste the plain, non-fat, Greek yogurt and for some of you, it may be too much.  I think that this recipe would work just as well and taste just as good if you used a vanilla flavored non-fat yogurt (Greek or regular). You could also use a little bit of vanilla extract in the Greek yogurt.  I will say that the Greek yogurt is what makes it so thick and creamy (like mousse) so be prepared for a little bit different consistency if you use regular yogurt.

My version packs a whopping 23 grams of protein and certainly keeps me feeling full for several hours.  The other great thing for me is that I feel like I am having dessert for breakfast.  I spread some of mine on half of a banana and eat the rest by itself.  This breakfast came about at a great time for me because I heard about it right when I was cutting out my breakfast cereal that I had been enjoying for months due to the fact that its main ingredient is wheat.  I was skeptical at first but I am so glad I decided to try something new.  I hope if you try to decide this (for breakfast or dessert), you enjoy it as much as I do.

    Good for you! Try Chia Seed Pudding (google it). Chia seeds, almond milk, some sweetener (I like honey) and any fruit you like (or not – your PB2 would be good too); shake it up in a mason jar and let it sit in the fridge overnight. Also, throw your mousse ingredients in a blender with almond milk and a little ice and make it a smoothie…
