Snack Attack

Snack AttackI hear a lot of talk about healthy snacks not only in my Weight Watchers meetings but in daily conversation as well.  It sounds like simple advice; “Eat a healthy snack,” but there are so many snacks out there masquerading as healthy that it can sometimes be difficult to make a good choice.

I thought I would share a recipe with you today for a very healthy snack that I enjoy just about every day and it is hearty enough that it can also be used for a meal if you like.  Those of you who know me know that I am a volume eater.  In other words, I want to know how much food I can have for the least amount of Points Plus®.  At at only 2 Points Plus®, this snack/meal is sure to satisfy not only your appetite but a need for volume as well.

1 Ole’ Extreme Wellness High Fiber, Low Carb Wrap (1 Point Plus®)

1 Wedge of Laughing Cow Lite Cheese (Any Flavor) (1 Point Plus®)

3Tbsp All Whites Liquid Egg Whites (0 Points Plus®)

Broccoli Slaw (0 Points Plus®)

Pico de Gallo (0 Points Plus®)

Prepare All Whites according to the directions on the package.  Spread the cheese wedge over the wrap and sprinkle broccoli slaw down the middle.  Place the All Whites on top of the broccoli slaw and sprinkle with pico de gallo.  Roll it up and enjoy!

***I top mine with mustard or Frank’s Red Hot Sauce to add a little bit of a kick without adding any Points Plus®.***

This voluminous snack is high in protein and guaranteed to keep you satisfied until your next meal.  I actually eat these for lunch several times per week.  I hope you take the time to try it and I hope you enjoy it as much as I do!
